In winter, it might be hard to find local greens. The good news is it is easy to grow shoots and sprouts at home in winter. You might also be able to find shoots and sprouts at a year-round farm store or at your local grocer. We love the varieties of shoots grown by Wing Over Farm in Moscow, Idaho and the alfalfa and bean sprouts available at the Moscow Food Co-op. Sprouts and shoots, whether they are alfalfa, bean, pea, sunflower or radish are sure to brighten any winter meal.
Try a breakfast salad with shoots, a local egg and a side of kale chips or explore adding shoots or sprouts to a fried egg sandwich. Both are great breakfast, lunch or dinner ideas.
