Superbly simple, kale chips are a year-round favorite at our house. Any variety of kale works great in this recipe - and, if you are lucky, you will be able to find local kale all year round at your winter farmers market, local farm stand or natural foods grocer.
1 bunch kale
Preheat oven 350F. Rinse kale. Remove stems and tear kale leaves into one or two inch pieces. Shake water from kale leaves or dry in a salad spinner. Spread kale evenly on a cookie sheet or large baking dish. Sprinkle amply with olive oil and salt. Place in oven. Stir and spread out kale every 15 minutes until kale is crisp and dry. Remove from oven. Let cool. Store in covered container.
Enjoy as a snack or crumble on top of soup, pasta or salad.
